16 ounces of pitted Kalamata Olives, approximately 16 ounces
A half teaspoon of fennel leaves
Half a teaspoon of dried thyme
Half a teaspoon of dried rosemary
1/4 cup of white vinegar
One-fourth cup of olive oil
2 pieces of dried bay leaves
First thing to do is drain the olives and rinse with running water. Clean the jars and put aside which would be used later for marinating the olives.
In a large mixing bowl, combine all ingredients except the olives and mix well.
When all ingredients are emulsified, add the olives and toss until the olives are fully-coated.
